Marissa Perry Saints said… - Jon is still planing on bringing receipt books for each vendor. This will help minimize the wait time at the cashier. Each vendor will be responsible for writing an itemized receipt for the customer, keep one copy for themselves, and give two copies to the customer (one for the customer and one for the cashier up front). The customer will come to the cashier with various receipts from each vendor, all the cashier needs to do is tally up the total from each receipt.
Does that still sound like a good plan to you?

I have a favor to ask. Would you be willing to help us organize our volunteer trip to Malawi this June? We basically are going to be tour guides to about 10 to 20 people or so, and we will be organizing all their volunteer work. Since you have some serious experience at this, and we don't, I thought maybe you'd like to help? :o)
